How Do You Keep Food Fresh on Multi-Day Hikes?

How are you keeping your hiking food fresh these days?

Do you ever have to throw stuff out because it loses freshness?
 
Depending on season, I will sometimes freeze food, like ground sausage I use for burritos. Have to use it in about two days, I will carry some fresh fruit like an apple or orange for the first day or so. Otherwise what I carry is store bought packed packets of chicken, tuna etc. so in theory all fresh for months. My tortilla shells being bread has been good for a week. Also indestructible in the pack

Tortilla shells are the best!

I like using them for hotdog buns even!
