Easy Trail Pancakes Recipe

Here's a simple recipe for making easy trail pancakes when you're out hiking or camping:

Ingredients:​

  • 1 cup pancake mix (just-add-water type for convenience)
  • 3/4 cup water (adjust for desired thickness)
  • 1 tablespoon powdered milk (optional, for creamier pancakes)
  • 1 tablespoon sugar or honey (optional, for added sweetness)
  • Oil or butter (for cooking)
  • Toppings of choice (dried fruit, nuts, or chocolate chips)

Equipment:​

  • Small mixing bowl or ziplock bag (for mixing)
  • Non-stick skillet or pan
  • Spatula
  • Stove or campfire

Instructions:​

  1. Prepare dry mix: In a small bowl or ziplock bag, combine the pancake mix, powdered milk (if using), and sugar.
  2. Add water: Gradually add the water to the dry ingredients, stirring until you reach your preferred pancake batter consistency. If you're using a ziplock bag, just squish the bag to mix.
  3. Heat your pan: On medium heat, add a small amount of oil or butter to your skillet or pan.
  4. Cook pancakes: Pour or scoop batter into the pan. Cook each pancake for about 1-2 minutes on each side, or until golden brown and cooked through. Flip when bubbles form on the surface.
  5. Add toppings: Serve with toppings like nuts, dried fruit, or chocolate chips for added flavor.
  6. Enjoy: Eat them hot and enjoy your trail adventure!
These pancakes are perfect for a quick and easy breakfast or snack while on the trail!
 
I have done pancake mix or biscuit dough wrapped on a stick and cooked over the fire, more of a novelty than practical. I have also cooked eggs in the shell running a shish cabob stick through it and cooked over a fire
